Summertime means one thing - barbecues. Lots of 'em. If
you want to enjoy everything that summer has to offer in the way of
culinary delights, but don't eat meat, you might find yourself leaving
all those backyard gatherings with your stomach still rumbling while
everyone else is stuffed full of hamburgers and hot dogs. Instead of
sitting on the sidelines, try grilling these delicious entrees that'll
have the meat-eaters wondering if they can get a bite of what you're
having.
Grilled veggies are amazing in the summertime, and you really can throw almost any of them on a barbecue and come away with something delicious. Grill corn while it's still in the husk for a sweet treat, or coat some pineapple with a teriyaki glaze and throw it down on the grill for a yummy tropical snack. You can also grill tomatoes - we love the mild flavor of the green variety - as well as onions, bell peppers, squash and asparagus.
If you're dying for a meatless burger, try replacing the beef patty will a grilled portobello mushroom cap. Rich in flavor and texture, mushrooms make excellent meat substitutes, so top your "burger" with all the usual condiments - lettuce, tomato, mayo and ketchup - and dig in.
With all of these delicious grilled options, you won't even miss meat at your next summer get-together.
