Three things to do with those farmers' market veggies

altIn the summertime, all kinds of wonderful treats are ripe and delicious, from tomatoes and okra to strawberries, peaches and watermelon. If you're not picking up nature's fresh and juicy bounty this summer, you're missing out! Here are three ways to turn fruits and veggies into a delectable delicacy even your kids will love.

1. Dip 'em. Plain veggies aren't always a favorite, especially with kids. To make sure your children are getting all the nutrients they need, make a fresh dip for carrots, tomatoes, celery and broccoli that contains a little mayo and plenty of herbs. For a lighter option, make your own hummus with chickpeas, garlic and olive oil - add olives and red peppers for some extra Middle Eastern flair. Oh, and don't forget to dip those fruits - try dulce de leche for peaches and melted milk chocolate for strawberries.

2. Grill 'em. Corn, onions, okra, bell peppers - they all taste incredible with a little char from the grill! Skewer them on a kabob with some fresh meat or seafood for a full meal that's as healthy as it is yummy, or eat them plain with a pinch of salt as a side to another entree. And this isn't just limited to veggies. Peaches and figs also taste incredible after caramelizing on the grill - seriously.

3. When all else fails...deep-fry 'em. Coat your veggies in egg wash, dip them in a little flour and cornmeal and toss them in some boiling oil for a summertime splurge. You know you want to.
