Fry your veggies for a summertime treat

altSure, summertime is the season of counting calories and working for that bikini bod, but why not enjoy a treat every once in a while? After weeks of refreshing salads and healthy grilled veggies, fire up the deep fryer, because it's time to indulge. Hey, it's still vegetables, right?

For a light, summery dinner that packs lots of flavor and a delicious crunch, make a Japanese-style tempura batter that you can use you to coat all your favorite veggies. Traditional tempura includes asparagus, onions, sweet potato, broccoli, bell peppers, potato, mushrooms and carrot, but you can use any veggies you like. Simply dip them in a mixture of flour, water and egg and drop in hot oil - but make sure to let them drain before you enjoy so you don't soak up tons of excess calories.

If you're feeling inspired by the porch swings and sweet tea of southern summer life, try two yummy southern specialities: fried okra and fried green tomatoes. Both are delicious, traditional and surprisingly light. Serve alongside some chilled white wine for the perfect summer dinner.

While you probably shouldn't start deep-frying every Twinkie and Mars Bar in sight, there's nothing wrong with giving in to a craving every once in a while - especially when it's veggies that you're dropping in the fryer.
