Craving a Bit of Wellness in your Diet ?
Perhaps it's the endless shades of gray outside, and the ever wanting of summer's speedy arrival that has me longing for a greater sense of well-being this time of year. It appears I am not alone in this feeling.
According to a recent survey conducted by Renée's Gourmet, nearly eight in 10 Canadians are looking for simple ways of incorporating wellness into their daily lives.
Our desire to feel good, and consume foods that are good for us, has spun into a new trend called wellness entertaining'. Don't worry, this does not mean your guests will have to gnaw away at boring raw vegetables at your next party, it's all about simple ways to add a bit of goodness to regular meals, and of course, doing it stylishly!
Take your usual fruit salad, for example. To make it deserving of your most discerning guests, I suggest adding a flavourful dressing. For the recipe below, I used the Pomegranate Blueberry Açai vinaigrette from Renée's new line of Wellness Dressings. Packed with antioxidant-rich nutrients and only 5 calories per serving, it takes your salad from simple, to simply indulgent. Dress it up by serving it in a martini glass, and it will have heads turning, and mouths watering.

Watermelon & Feta Salad
Ingredients Serves 4
1 bottle (270 ml) Renée's Pomegranate Blueberry Açai Wellness Dressing
4 cups diced watermelon
2 cups crumbled feta cheese
1 bunch fresh basil
½ cup olive oil
1 tsp salt
1 tsp cracked fresh pepper
Method
Using a salad bowl, toss the watermelon with ¼ of the Renée's Pomegranate Blueberry Açai Wellness Dressing.
Place the watermelon mix in four bowls or martini glasses.
Garnish the watermelon with the crumbled feta cheese.
Take the freshly picked basil and tear into small pieces and garnish the glasses.
Drizzle olive oil over the salad and add salt and pepper for taste.
Finally, finish off the salad with a drizzle of Renée's Pomegranate Blueberry Açai Wellness Dressing.
Tip: Use clementine or mandarin oranges
when watermelon is out of season.
