Matti Gidilevich: It's about what I eat and how I eat. I've been a raw vegan for the last ten months and that has made a significant change in my energy levels. I find now that I jump out of bed at 5:30 AM, totally ready to go! Whereas before I was very lethargic and it was a real chore just to get up and start my day.

W: Energy food of choice?

MG: I do a lot of my own sprouting and dehydrating. Just this last weekend I experimented and came up with a raw buckwheat trail mix that I brought with me on a trip to Vancouver, since I couldn't eat the plane food. First, I sprouted the buckwheat for three days, then added agave, coconut and ground almonds. I dehydrated [the mix] overnight, threw it in a Ziploc bag and was out the door. It turned out really great!

W: Do you have any more successful experiments?

MG: I have blog at www.mattigee.com and that's where I put all my trials and tribulations and recipes. [Between] what works and what doesn't work, it's a bit of a work in progress for a recipe book.
