Easy to make blueberry snack bars are a perfect addition to your kid's lunchbox! Any berry can be used.
Ingredients
1 box (2 layer) yellow cake mix
1/2 C. butter or margarine; melted
3 eggs
1 pkg. (8 oz) cream cheese
2 1/2 C. confectioner's sugar
1 can (2l oz) blueberry pie filling
3/4 C. coconut
3/4 C. chopped walnuts

Preheat oven to 325. In a large bowl combine cake mix, butter, and 1 egg; blend well. Pat mixture into bottom of a well greased 15x10" jelly roll pan. In a mixing bowl, beat cream cheese until fluffy, beat in 2 eggs and confectioner's sugar. Pour over cake mixture in pan. Spread blueberry pie filling on top and sprinkle with coconut and nuts. Bake for 45 minutes or until lightly browned. Cool and cut into bars.
