Banana Bread

Nothing better than fresh banana bread straight from the oven...mmmmm!
Ingredients
1 C. mashed overripe bananas (about 3 bananas) 3/4 C. sugar 1 1/2 C. flour 1 tsp. baking soda 1 tsp. vanilla extract or almond extract 2 eggs 1 stick (8 Tbs.) butter, softened or melted 1/4-1/2 C. walnuts (optional) 1/4 C. chocolate chips (optional)

Preheat oven 350 degrees. Combine all ingredients in a large bowl. Mix well. (HINT: Sift flour, sugar, and baking soda!) Pour into greased loaf pan. Bake for 1 hour at 350 degrees. Cool on rack when done. Serve warm or at room temperature with butter or your favorite topping.
