Chicken a la Jessica

You can't go wrong with tender chicken, rotini noodles and vegetables of your choice.
Ingredients
1/2 box rotini noodles 3 boneless chicken breasts 1 pkg. mushrooms (optional) 1 green pepper (optional) Salt to taste Parsley to taste

Put noodles in cast iron pot with water and bring to a boil. Cook according to package instructions and drain.  Put noodles in a 13x9-inch pan or larger. Chop chicken and put in separate 13x9-inch pan. Cook at 350 degrees for 30-40 minutes. Meanwhile, chop vegetables and blanch them with parsley. When chicken is done, add everything to noodles. Wait to cool down and serve.
