Cinnamon Fruit Bake

You'll find that this baked recipe can be customized with your favorite fruit (apples, pears or bananas) and is great with the addition of granola on top.
Ingredients
3 1/2 C. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 tsp. cinnamon 1 tsp. ground ginger 1 tsp. ground nutmeg 1/2 tsp. cloves 2 C packed brown sugar 1 C. vegetable oil 1/2 C. molasses 2 tsp. vanilla extract 4 eggs 3-4 pears, peeled, cored and diced 1 C. chopped walnuts (optional)

Preheat oven to 350 degrees. Grease and flour two loaf pans. In a bowl, combine the first eight ingredients. In a separate large mixing bowl, combine brown sugar, vegetable oil, molasses, vanilla, and stir in flour mixture. Pour into prepared loaf pans. Bake for 55-65 minutes or until done. Cool in pans for 15 minutes. Remove from pan and cool completely.
