Day-After Thanksgiving Bagels

Thanksgiving leftover bagels are a great way to reinvent your holiday surpluses.
Ingredients
Spread: 1/2 C. chopped celery 1/2 C. chopped dried cranberries or cherries 1/3 C. low fat mayonnaise 1 Tbs. Dijon-style mustard Sandwich: 4 bagels, split 1/2 lb. smoked turkey breast 4 slices Swiss, Provolone or Monterey Jack cheese Lettuce

Stir together the spread ingredients in small bowl. Cover and refrigerate at least 1 hour. To make sandwiches, divide spread among the bottom bagel halves. On the top of the spread, layer 1/4 of the turkey, 1 slice cheese, 1 or 2 lettuce leaves. Top with the other bagel half and serve.
