This hearty and delicious soup will go a long way on a cold, winter day!
Ingredients
3/4 lb. hamburger meat
1 egg
1 small onion, finely diced
1 C. bread crumbs
Season salt to taste
2 14 oz. cans chicken broth (low sodium)
6 oz. fiori pasta
1 1/2 C. broccoli florets, chopped finely
1 9 oz. container mild cheese dip
1/2 lb. American cheese (preferrably white), cubed

Mix first 5 ingredients. Form into small meatballs (approximately 40). In a large frying pan, cook in water on medium-high heat for 15 minutes or until done. Meanwhile, cook fiori pasta in boiling salted water for 4 minutes; drain. Cook broccoli in boiling water for 2-3 minutes; drain. In a large pot, heat chicken broth to boiling. Reduce heat to low. Add cheese dip and white American cheese, stirring often. Add fiori pasta, broccoli and meatballs. Cook 15-20 minutes. Serve with fresh baked French or Italian bread.
