Sliced onion mixed right in the boiling water makes this an interesting way to poach an egg. You might never poach an egg alone again.
Ingredients
1 onion, sliced
2 eggs
1 tsp. olive oil
1 tsp. dried parsley
2 C. water
salt to taste
Place onion, salt, oil, parsley and water in 2-qt. pot and bring to a boil. Lower heat and simmer until onion is tender. Crack and add eggs, being careful not to break the yolk. Cover and remove from heat. Let stand until eggs are set, about 5-7 minutes. Serve over buttered toast.
