Sandy's Soy Burger Recipe

This recipe is a great alternative and produces burgers that are bbq'able and broil'able.
Ingredients
2 lg. red leaf lettuce leaves 2 grilled-vegetable soy burgers 2 Tbs. goat cheese 1 bottled roasted red pepper, halved 1/2 C. BroccoSprouts 1/2 C. baby spinach leaves

Place lettuce leaves onto work surface, long side facing you. With fingers, press lightly to flatten center of each. Prepare burgers per package directions for microwave. Place 1 on center of each lettuce leaf. Top each with 1 Tbs. cheese, 1/2 red pepper, 1/4 C. each sprouts and spinach. Fold up bottom and sides of each lettuce leaf to enclose burgers. Serve immediately.
