Chicory, apple & date salad

Sweeten up a simple salad with fat juicy Medjool dates to give your supper a touch of the exotic
Ingredients
* 3 chicory heads, leaves separated * 3 Medjool dates , pitted and julienned * 100g watercress , large stalks removed * 1 apple , quartered, cored and thinly sliced * a handful mint leaves * a handful flat-leaf parsley DRESSING * 1 lemon , juiced * 5 tbsp olive oil * 2 tbsp white wine vinegar

  1. Whisk together all of the dressing ingredients.
